A trip to the islands is never far away with this salad recipe. Tender baby spinach is tossed with curry-broiled pineapple, red onion and macadamia nuts, then drizzled with a simple mango vinaigrette. A vacation in a bowl!

Spinach salad with curry broiled pineapple, red onion and macadamia nuts

Serves 2

Ingredients:

  • 4 cups baby spinach, washed and dried
  • 2 cups fresh pineapple wedges, sliced
  • 1/2 small red onion, sliced very thinly
  • 1/2 cup macadamia nuts, toasted
  • 1 teaspoon yellow curry powder
  • 2 tablespoons white balsamic vinegar
  • 1/4 cup mango nectar
  • 2 tablespoons olive oil
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon sriracha hot sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions:

  1. Preheat the oven broiler for 5 minutes.
  2. Lay the pineapple slices flat on a baking sheet and sprinkle evenly with curry powder.
  3. Broil for 10 to 15 minutes, turning halfway through, until just starting to caramelize.
  4. Remove from oven and allow to cool for 5 to 10 minutes.
  5. To make the dressing, whisk together the balsamic vinegar, mango nectar, olive oil, ginger, hot sauce and mustard until smooth.
  6. Season the dressing with salt and pepper as desired.
  7. To serve, toss the spinach with the pineapple, red onion and macadamia nuts, then drizzle with dressing as desired.
