Veggie Casserole is a great last minute meal that's perfect for using up left over vegetables or a freezer full of frozen ones. Mix it up and use any combination of veggies you'd like. 

Tip: If you have some leftover meat on hand, you can throw that in the mix as well for a complete meal. 


  • 1 tablespoon butter or olive oil
  • 1 small onion, chopped or 1 teaspoon onion powder
  • 1 cup milk
  • 2 eggs, whisked
  • 2 cups broccoli, cooked
  • 1 cup corn, cooked
  • 2 cups brown rice, cooked
  • 1 cup cheddar cheese, grated


  1. Melt butter in a small skillet and cook onions for 3-5 minutes until soft.
  2. Beat together milk and eggs in a small bowl.
  3. Stir veggies, rice, onions, and cheese into egg mixture.
  4. Pour mix into a greased casserole dish.
  5. Bake casserole at 350 degrees Fahrenheit for 30-40 minutes until egg sets and top is golden.
