Turkey and Bean Chili offers a leaner, yet still tasty, option for cold winter days or any time of the year. This recipe is quick and easy too.

Ingredients

  • 1 tablespoon olive oil
  • 1 green pepper
  • 1/2 pound ground turkey
  • 1 teaspoon ground cumin
  • 1, 28 ounce can diced tomatoes
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2, 15 ounce cans kidney beans, rinsed
  • salt and pepper

Directions

  1. Prepare your ingredients by chopping green pepper, onion, and garlic.
  2. Using a large pot, heat oil and saute onion, pepper, and garlic for about 5 minutes.
  3. Crumble in ground turkey, browning till done.
  4. Stir in tomato paste, cumin, and chili powder.
  5. Continue stirring as you add tomatoes, beans, 1/2 cup of water, and salt/pepper to taste.
  6. Bring soup to a boil, then reduce the heat and simmer for 15 minutes.
  7. Serve when soup has thickened.
