
Turkey and Bean Chili

Turkey and Bean Chili offers a leaner, yet still tasty, option for cold winter days or any time of the year. This recipe is quick and easy too.
Ingredients
- 1 tablespoon olive oil
- 1 green pepper
- 1/2 pound ground turkey
- 1 teaspoon ground cumin
- 1, 28 ounce can diced tomatoes
- 1 onion
- 2 cloves garlic
- 2 tablespoons tomato paste
- 2 teaspoons chili powder
- 2, 15 ounce cans kidney beans, rinsed
- salt and pepper
Directions
- Prepare your ingredients by chopping green pepper, onion, and garlic.
- Using a large pot, heat oil and saute onion, pepper, and garlic for about 5 minutes.
- Crumble in ground turkey, browning till done.
- Stir in tomato paste, cumin, and chili powder.
- Continue stirring as you add tomatoes, beans, 1/2 cup of water, and salt/pepper to taste.
- Bring soup to a boil, then reduce the heat and simmer for 15 minutes.
- Serve when soup has thickened.
