  • 1/2 cup unsalted butter, softened
  • 1/4 cup packed brown sugar
  • 1 egg, separated
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts
  • 2/3 cup fruit preserves

  2. Using a hand mixer on medium speed, cream butter, sugar, and egg yolk; add vanilla, flour, and salt; mix well.
  3. Place the egg white and the chopped walnuts in shallow bowls.
  4. Use a teaspoon to pick up pieces of dough, then use your hands to shape into a ball. Roll the balls in egg white, then walnuts. Place on cookie sheets about 2-inches apart.
