Sweet potato casserole and pineapples

Adding pineapples to sweet potatoes, along with cinnamon and honey, gives this dish a perfect sweetness. It also contains vitamins C and A, both of which are great for the immune system.


  • 2 sweet potatoes, peeled and diced
  • 1, 8-ounce can pineapple chunks, drained
  • 1/4 teaspoon cinnamon
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 350 degrees F.
  2. Add diced sweet potatoes to a pot, and fill with enough water to cover the potatoes; bring to a boil over high heat.
  3. Once boiling, reduce heat and allow to cook until potatoes are fork tender.
  4. Drain potatoes and return them to the hot pot.
  5. Add pineapple, cinnamon, honey, salt, and pepper and toss to coat.
  6. Transfer to an 8-inch baking dish, and bake for 12 to 15 minutes.
