Spicy turkey wrap

The key to keeping these turkey wraps healthy is using lettuce leaves, not tortillas.


  • 2 teaspoons olive oil
  • 1 pound ground turkey breast
  • 1/2 chopped red pepper
  • 1/2 chopped yellow pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup mild salsa
  • 1 can (15-ounce) pinto beans, rinsed and drained
  • 12 Boston lettuce leaves


  1. Heat olive oil in a large skillet for about one minute. Add ground turkey, along with peppers, chili powder and cumin.
  2. Cook until turkey is brown (about 6-8 minutes), stirring occasionally.
  3. Stir in salsa and beans and continue cooking for five minutes.
  4. Arrange three lettuce leaves on each plate and divide turkey evenly among all the leaves.
  5. Top each lettuce cup with more salsa, yogurt or anything else you like. Fold into a wrap and eat by hand.
