
Spicy turkey wrap

The key to keeping these turkey wraps healthy is using lettuce leaves, not tortillas.
Ingredients
- 2 teaspoons olive oil
- 1 pound ground turkey breast
- 1/2 chopped red pepper
- 1/2 chopped yellow pepper
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 cup mild salsa
- 1 can (15-ounce) pinto beans, rinsed and drained
- 12 Boston lettuce leaves
Directions
- Heat olive oil in a large skillet for about one minute. Add ground turkey, along with peppers, chili powder and cumin.
- Cook until turkey is brown (about 6-8 minutes), stirring occasionally.
- Stir in salsa and beans and continue cooking for five minutes.
- Arrange three lettuce leaves on each plate and divide turkey evenly among all the leaves.
- Top each lettuce cup with more salsa, yogurt or anything else you like. Fold into a wrap and eat by hand.
