Shortbread cookies

An international holiday favorite, this recipe for shortbread cookies will please both Santa and his elves!


  • 1/2 lb margarine or butter
  • 1 cup brown sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 2 cups flour
  • Pinch of salt
  • 1, 12-ounce bag of chocolate chips, optional
  • 12 cup chopped nuts, optional


  1. Mix together butter, sugar, egg yolk, and vanilla; add flour and salt.
  2. Spread mixture thinly on a 12 x 14-inch cookie sheet; bake 10 minutes.
  3. If using chocolate chips, immediately pour the chips over dough, return to oven for one minute to soften the chips, spread over dough like frosting.
  4. If using nuts, sprinkle after removing dough from oven; cool, cut into squares.
