Royal icing for sugar cookies

Separate the icing into several small bowls for different colors. This icing is made with egg white powder so there is less risk from uncooked egg whites.


  • 2 tablespoons egg white powder
  • 1 pound powdered sugar
  • 6 tablespoons lukewarm water
  • 1/4 teaspoon lemon juice
  • Food coloring (optional)


  1. In a large bowl, beat the egg white powder and sugar until well blended.
  2. Beat in the water and lemon juice; beat vigorously until the icing is glossy and thick, about 5 minutes.
  3. If using food coloring, beat that in until the icing is even in color.
