Roasted Garlic

Roasted garlic is a delicious, aromatic herb added to many great dishes. Once you master preparing it yourself, there will be know need for using store bought.


  • 1-4 bulbs of garlic
  • 2 teaspoons olive or vegetable oil for each garlic bulb
  • salt and pepper to taste


  1. Being sure to keep the bulb intact, peel away most of the papery skin.
  2. Slice off about 1/4-inch from the top of the bulb to expose the cloves.
  3. Place each bulb, cut side up, on a piece of foil.
  4. Brush each bulb with 2 teaspoons of oil; sprinkle with salt and pepper.
  5. Wrap foil around the bulb, place in a shallow baking pan, and cook for 45-50 minutes at 350 degrees Fahrenheit.
  6. Garlic can be squeezed out of the cloves for use.
