This recipe for pinwheel cookies, cut from a rolled log, may be colored with food coloring according to the season. You can also use different flavored extracts to mix up the flavor.


  • 4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/3 cups unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2/3 cup sugar
  • 2 eggs, lightly beaten
  • 1 1/2 teaspoons vanilla
  • Food coloring, as desired


  1. In a medium bowl, sift the flour, baking powder, baking soda, and salt together. Set aside.
  2. In another bowl, beat the butter and sugars together until light and fluffy; add the eggs and vanilla and beat well.
  3. Gradually add in the flour mixture; beat until smooth and uniform in consistency.
  4. Divide mixture in half; add food coloring, as desired to each half, mixing well.
  5. Roll out each half of the dough to 1/8-inch thickness and to about the same dimensions.
  6. Place one layer of dough on top of the other and roll into a single log. Wrap tightly in plastic and refrigerate for several hours.
  7. Preheat oven to 400 degrees F and line several cookie sheets with parchment paper.
  8. Remove the log from the refrigerator. Cut thin slices from the log and place on the cookie sheets.
  9. Bake 5 to 6 minutes. Cool completely.
