Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 1/2 pound new potatoes
  • 2, 2 inch sprigs of rosemary
  • 2 teaspoons minced rosemary
  • 2 teaspoons coarse sea salt
  • 1/2 teaspoon pepper

Directions

  1. In a large skillet, heat oil and butter. Cook potatoes for 5 minutes.
  2. Add the sprigs of rosemary and reduce heat to a simmer.
  3. Cook 15 minutes, shaking skillet occasionally to stir.
  4. Serve sprinkled with salt, pepper and minced Rosemary.
