One dish meals are perfect for large get-togethers, hospitality meals, and for freezing. This one, for Maple Mustard Chicken Pasta, is so good, it might not make it to the freezer. Enjoy is anytime of year, for lunch or dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon chives, chopped
  • 1 tablespoon apple cider vinegar
  • 2 1/2 tablespoons maple syrup
  • 2 tablespoons brown mustard
  • 1 1/2 pounds chicken
  • 1 cup chicken broth
  • 3/4 cup roasted red peppers, chopped
  • 1/4 cups sundried tomatoes, chopped
  • 1/4 pound snow peas, lightly steamed
  • 1/2 bound penne pasta, cooked

Directions

  1. Prepare penne as directed on package.
  2. Lightly steam snow peas.
  3. Prepare ingredients by chopping rosemary, chives, peppers, and tomatoes. Mince garlic.
  4. In a skillet, heat 1 tablespoon oil and garlic.
  5. Add rosemary, chives, and vinegar and cook 30 seconds.
  6. Cool in a bowl, then add syrup and mustard.
  7. Cover chicken with sauce mixture in a baking dish and chill.
  8. Heat the remaining oil in skillet and cook chicken. Season with salt and pepper. Cook 2 minutes on each side.
  9. Reduce heat and continue cooking till chicken is done.
  10. Cube chicken then add 1/2 cup broth, simmering till reduced.
  11. Add remaining broth and marinade. Boil 5 minutes.
  12. Lightly toss chicken, peppers, tomatoes, peas, and pasta in a large bowl.
  13. Pour sauce over the top and serve.
