Try this healthy, easy and delicious recipe for lemony poaced fish.

Ingredients

  • 1 onion, thinly sliced
  • 2 stalks of celery, thinly sliced
  • 3 thin slices ginger root
  • Rind of half a Meyer lemon, cut into strips
  • Few sprigs of fresh parsley
  • Few sprigs of fresh thyme or 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 4 pieces of fish filets
  • 3 eggs
  • 1/3 cup Meyer lemon juice
  • 2 tablespoons chopped fresh dill and chives
  • 1/4 teaspoon black pepper

Directions

  1. In a skillet just large enough to hold the fish filets in 1 layer, scatter onion, celery, ginger, lemon rind, parsley, thyme, salt, and pepper; add 4 cups of water and bring to a simmer over low heat. Cover and let simmer for 10 minutes.
  2. Add fish filets, reduce heat to low, cover and poach until the fish flakes easily, about 10 minutes. Carefully remove fish to a serving platter and keep warm.
  3. Strain cooking liquid through a fine sieve, reserving 2/3 cup.
  4. In heat-proof bowl, beat eggs. A few drops at a time, beat in lemon juice. Stir in reserved cooking liquid.
  5. Place bowl over boiling water and cook, stirring, until thick enough to coat spoon, about 5 minutes. Do not boil. Season to taste with salt and pepper, then stir in dill. Spoon over fish and serve.
