Lamb with Creamy Mint Sauce

While many wouldn't opt for making lamb, it is a really great meat choice. This recipe for Lamb with Creamy Mint Sauce is light, delicious, and surprisingly easy to cook. Perfect for Easter Dinner with the family or any meal time.
Ingredients
- 2/3 cup plain fat-free yogurt
- 1/4 cup firmly packed fresh mint leaves
- 3 tablespoons sugar
- 4 lam loin chops, about 1 inch thick
Directions
- Using a food processor, blend yogurt, mint, and sugar until leaves are finely chopped.
- Broil chops on a greased broiler pan for 12-14 minutes. Chops should read 160 degrees Fahrenheit on a meat thermometer.
- Serve with sauce.
