Italian green bean casserole

Here's a variation on a green bean casserole just in time for the holidays.


  • 3 cups fresh green beans, rinsed and trimmed
  • 1, 10-ounce can diced tomatoes, drained (plain are fine, or you can try the kind with Italian seasonings added)
  • 2 cloves garlic, chopped (add more if your family loves garlic)
  • 1 small white or yellow onion, sliced
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional)


  1. Heat olive oil in large skillet over medium-high heat, or skip the oil and use nonstick cooking spray.
  2. Stir in garlic until softened, but not too brown, about one minute. Add onion and stir until soft, about 2 minutes.
  3. Add beans and tomatoes; sauté until lightly browned, but not too soft, about 3 minutes.
  4. Add salt and pepper.
