Grilled veggie kabobs

Grilled veggies are delicious and healthy -- so grab some skewers and your favorite vegetables to make a delicious meal or side dish.

Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1-1/2 teaspoons dried oregano
  • 1 large clove garlic, mashed
  • 4 medium red onions
  • 2 medium zucchini
  • 2 medium yellow summer squash
  • 1 large bell pepper
  • 12 cremini mushrooms, stemmed
  • 12 large cherry tomatoes

Directions

  1. Mix olive oil, lemon juice, salt, pepper, oregano and garlic in a small bowl.
  2. Cut onions, zucchini, squash and pepper into one-inch chunks.
  3. Place all vegetables in a large zipper-top plastic bag. Pour in marinade and seal the bag. Shake gently to coat.
  4. Marinate for one hour or longer.
  5. Remove veggies from marinade and thread onto skewers.
  6. Place directly on hot grill and cook 15 minutes or so until vegetables are golden and tender, but not mushy.
  7. Brush with additional oil or melted light margarine before serving, if desired.
