Green Beans with Bacon Vinaigrette

Green beans are a staple side dish to any family table. Here, green beans get kicked up a notch just in time for a holiday get-together with a bacon vinaigrette that is as delicious as it sounds.


  • Kosher salt and black pepper
  • 2 pounds green beans, trimmed
  • 6 slices bacon
  • 2 shallots, sliced
  • 2 tablespoons cider vinegar
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons olive oil


  1. Boil green beans in a large pot of water with 1 tablespoon of salt for 5 minutes, or until tender.
  2. Drain and cool under running water.
  3. Cook bacon in a medium skillet till crisp. Drain on paper towels. Crumble.
  4. Reserve 2 tablespoons of bacon drippings, heat to medium, and cook shallots for about 1 minute.
  5. Stir vinegar, mustard, oil, 3/4 teaspoon salt, and 1/4 teaspoon pepper with shallots.
  6. Toss green beans, bacon, and vinaigrette together in a serving dish.
