Ingredients

  • 1/2 cup sun-dried tomatoes
  • 1/2 cup boiling water
  • 1/4 cup olive oil
  • 1-2 garlic cloves, to your taste, minced
  • 10-12 ounces goat cheese
  • salt to taste
  • finely chopped fresh basil leaves for garnish

Directions

  1. In a glass bowl, pour boiling water over sun-dried tomatoes and let stand for about 10 minutes until soft.
  2. Drain water from bowl and mix in oil and garlic. Refrigerate, covered, for at least an hour or up to 2 days.
  3. When ready, mash goat cheese with tomatoes.
  4. Season with salt and garnish before serving.
