Ingredients

  • 1 sugar pumpkin, halved and seeds scraped out

Directions

  1. Preheat oven to 350 degrees F and line a baking sheet with foil.
  2. Place the pumpkin, cut side down, on the baking sheet; bake until tender, up to 90 minutes.
  3. Cool completely, then scoop the tender flesh of the pumpkin out of the shell and place in a food processor or blender; purée until smooth.
  4. Press the puréed pumpkin pulp through a sieve to remove any fibers.
