Fresh Broccoli Salad is a great, healthy dish. It is especially good in the summer, but can be enjoyed throughout the year as well. Prepare this salad a day ahead for the best flavor and texture.
Ingredients
- 3 large bunches of broccoli, chopped
- 2 cups shredded cheddar cheese
- 1 red onion, minced
- 1 pound bacon, cooked and crumbled
- raisins if desired
- 2 cups mayonnaise
- 1/4 cup sugar
- 3 tablespoons apple cider vinegar
- salt and pepper to taste
Directions
- Stir together broccoli, cheese, onion, and bacon in a large bowl. Also add raisins if you are including them.
- In a smaller bowl, combine remaining ingredients.
- Toss the two mixtures together in the larger bowl.
