Freezable Steak Fajitas

Steak Fajitas are delicious and quick. Plus, this recipe gives you the option of freezing the entire meal for up to 3 months ahead of time. Also, since the meal is divided into smaller portions, you can cook for 1 to 4 people without any additional work.

Ingredients

  • 1 pound flank steaks
  • 1 onion
  • 2 red bell peppers
  • 1 jalapeno pepper
  • 1 teaspoon chili powder
  • 1 teaspoon hot sauce
  • Kosher salt
  • 4, 1 quart freezer bags

Directions

  1. Thinly slice flank steaks against the grain. Slice onion, red peppers, and jalapeno.
  2. Combine all ingredients in a bowl, then divide evenly into freezer bags.
  3. When ready to cook, heat 1 teaspoon (per bag) of olive oil in a large skillet.
  4. Empty frozen bag(s) into pan and cook, covered, for 10 minutes over medium heat. Stir occasionally.
  5. Increase heat, remove cover, and cook 3-6 minutes longer, until done.
