Easy banana bread

  • 8 tablespoons butter, room temperature (1 stick)
  • ¾ cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large bananas, ripe and mashed
  • 1 ½ teaspoons vanilla extract


  1. Directions: Set oven to bake at 350 degrees F, grease 9 x 5 x 3-inch loaf pan.
  2. Cream butter and sugar until light and fluffy. Add eggs and beat until well combined.
  3. In a separate bowl, whisk flour, baking soda, and salt together, then add to creamed mixture. Mix until just combined.
  4. Fold in bananas and vanilla extract.
  5. Pour mixture into pan, bake 50-60 minutes, or until cake tester comes out clean. Cool in pan 10 minutes, then transfer to a cooling rack. Note: You may add 1 cup of chopped walnuts with the bananas.
