Deviled Potato Salad adds a kick to your favorite summer potluck food.

Ingredients

  • 2 1/2 pounds of potatoes
  • coarse salt
  • 1/4 medium onion
  • 3 tablespoons yellow mustard
  • 1/2 cup mayonnaise
  • 1 teaspoon sweet paprika
  • 1 teaspoon hot sauce
  • salt and pepper to taste
  • 2 scallions for garnish

Directions

  1. Peel and dice potatoes.
  2. Boil in a pot of salted water for about 10 minutes.
  3. While potatoes are cooking, grate onion into a medium bowl.
  4. Drain potatoes, then return them to hot pan for 2 minutes to remove remaining water.
  5. Spread potatoes out on a baking sheet to cool.
  6. Add mayonnaise, mustard, paprika, and hot sauce to bowl with onions. Mix well.
  7. Add potatoes and toss to coat.
  8. Sprinkle with salt and pepper to taste. Garnish with sliced scallions.
