Curried Turkey Pita is a perfect lunch sandwich and a great alternative to left-over Thanksgiving turkey. The dressing can be made ahead of time and refrigerated for up to a day. And, the pitas can be stuffed up to 6 hours prior to being served.
Ingredients
- 1/4 cup mayonnaise
- 1 teaspoon curry powder
- 1/8 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 2 cups roasted turkey, shredded
- 1/2 cup grapes, halved
- 2 celery stalks, sliced
- 1 scallion, sliced
- 2 pita halves
Directions
- Prepare ingredients by shredding left over turkey, halving the grapes, and slicing the celery and scallion.
- Mix mayonnaise, curry powder, salt, and pepper in a bowl.
- Toss turkey, grapes, celery, and scallion with dressing mixture.
- Serve in pita halves.
