
Crock Pot Taco Soup

This quick and easy Taco Soup is perfect for on-the-go moms. Can cook in a crock pot over night and all day while at work or running errands. Ground beef can be cooked ahead of time and stored in the freezer, then added to crock pot frozen. Also, canned corn can be substituted for hominy. Serve with tortilla strips, cheese, and sour cream for an added touch.
Ingredients
- 1 pound extra lean ground beef
- 2 cans hominy, including juice
- 2 cans pinto beans, including juice
- 2 cans Ro-Tel tomatoes, including juice
- 1 package taco seasoning mix
- 1 package Ranch dressing mix
Directions
- In skillet over medium-high heat, brown hamburger meat making sure to crumble meat well. Drain meat when done.
- Place meat and all other ingredients in a crock pot and stir.
- Cook on low at least 8 hours and serve.
