Baked Corn is a yummy side dish the whole family will enjoy. This recipe takes a little time but the results are well worth it.

Ingredients

  • 2-4 bacon slices
  • 1 tablespoon butter
  • 2 tablespoons onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 cup sour cream
  • 16 ounces frozen corn, thawed

Directions

  1. Chop onion.
  2. Cook bacon till crisp; then, drain on paper towels.
  3. Dispose of all but 1 tablespoon of bacon drippings.
  4. Melt butter in hot drippings and add onions. Cook about 3 minutes.
  5. Whisk in the flour and salt until bubbly.
  6. Add sour cream and continue to whisk for 3 minutes.
  7. Add corn and cook 5 minutes.
  8. Spoon mixture into greased 8x8 dish.
  9. Crumble bacon and sprinkle on top of corn mixture.
  10. Bake at 350 degrees Fahrenheit for 15-20 minutes.
