These yummy muffins are perfect for breakfast on the go,  a brunch with friends and your favorite coffee, or just about anytime.  Tip: don't over mix.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar, divided
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3/4 cup milk
  • 1 egg, beaten
  • 1/3 cup butter, softened
  • 1 teaspoon cinnamon
  • 1/3 cup butter, melted

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease 12 muffin cups.
  3. Mix flour, 1/2 cup sugar, baking powder, salt, and nutmeg in medium bowl.
  4. In a separate small bowl, beat milk and egg together.
  5. Using a large bowl, beat soft butter till fluffy and then begin adding flour mixture and egg mixture alternately using a wooden spoon.
  6. Spoon into muffin pans and bake for about 15 minutes.
  7. Mix together the rest of the sugar and cinnamon.
  8. Dip muffin tops into melted butter and then in cinnamon/sugar mix before serving.
