Jazz up a traditional gazpacho by adding plenty of chunky fruits to the recipe.

Ingredients

  • 2 cups diced tomatoes
  • 2 cups diced honeydew melon
  • 2 cups diced cantaloupe
  • 1 cup diced mango
  • 1 cup diced peeled cucumber
  • 1 cup orange juice
  • 1/2 cup chopped sweet onion
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Splenda or other sugar substitute
  • 1/2 teaspoon salt
  • 1 chopped jalapeno pepper

Directions

  1. Combine all ingredients in a large bowl. Cover and chill at least 2 hours.
  2. If you are in a hurry, put it in the freezer for 20-30 minutes and it will be chilled but not frozen.
