These chocolate chip banana muffins are so yummy, you'll want to snack on them long after breakfast.

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 cup sour cream
  • 2 very ripe bananas, mashed
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 6-ounce package chocolate chips

Directions

  1. Line muffin tins with paper muffin cups and preheat over to 350 degrees.
  2. Blend butter and sugar until smooth.
  3. Blend in eggs, one at a time.
  4. Mix baking soda into the sour cream, and allow it to "rise" for a few minutes.
  5. Add the mixture to the butter, sugar and egg mixture and beat well.
  6. Blend in bananas.
  7. In a separate bowl, mix flour and baking powder. Then slow blend into wet mixture.
  8. Add vanilla.
  9. Fold in chocolate chips with a wooden spoon.
  10. Fill about 18 muffin cups 2/3 full.
  11. Bake for 25 minutes.
