Here's a quick and super easy Cajun recipe for Chicken Creole. With just a few ingredients and a little bit of time, you'll be on your way to a delicious New Orleans meal. Serve chicken with hot, white rice.

Ingredients

  • 1 fryer chicken, cut up
  • 2 small cans chicken gumbo soup
  • 1/2 cup of ketchup
  • 1/2 cup of water
  • 1-2 cups of flour, as needed
  • enough oil to reach 1/2-inch deep in skillet

Directions

  1. Wash and dry chicken pieces. Season with salt and pepper.
  2. Coat the chicken pieces lightly in flour.
  3. Heat oil in a large skillet.
  4. Place chicken in hot oil and cook until well browned on all sides. (About 10 minutes.)
  5. Drain all but about 2 tablespoons of oil from the pan.
  6. Add soup, water, and ketchup to the pan, stirring well and scraping up the cooked flour bits from the bottom of the pan.
  7. Return chicken pieces to the pan as well. Cover and simmer for about 15 minutes.
