The addition of blueberries really sets this recipe apart from other breads. Plus, Berry Banana Bread made with this recipe is diet friendly at only 120 calories per serving.

 

*Be sure to transfer loaf to a wire rack. This creates a crispy crust to the bread rather than the soggy one you get from letting the bread cool in the pan.

Ingredients

  • 2 cups Reduced Fat Bisquick
  • 3/4 cup quick-cooking oats
  • 2/3 cup sugar
  • 1 cup mashed, very ripe bananas
  • 1/2 cup Egg Beaters or 4 egg whites
  • 1/4 cup skim milk
  • 1 cup blueberries

Directions

  1. Combine Bisquick, oats, sugar, bananas, egg, and milk in a bowl.
  2. Lightly stir in blueberries then pour batter into greased 9x5x3-inch loaf pan.
  3. Bake bread at 350 degrees Fahrenheit for 55-60 minutes. Cool in pan for 10 minutes then on wire rack for 1 hour.
