Ingredients

  • 1 1/2 pounds beef stew meat, cut into 1-inch cubes
  • 1 tablespoon cooking oil
  • 2 medium carrots, sliced
  • 2 medium yellow summer squash, halved and sliced
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 3/4 teaspoon dried thyme, crushed
  • 3/4 teaspoon dried thyme, crushed
  • 3/4 teaspoon dried basil, crushed
  • 6 cups beef broth
  • 1/4 cup dry red or white wine
  • 2 cups chopped fresh spinach
  • 1/2 cup quick-cooking rice

Directions

  1. Heat oil in a large skillet. Brown meat until completely cooked. Drain.
  2. Add carrots, squash, onion, garlic, thyme, and basil to a slow cooker.
  3. Add drained, cooked meat on top of the vegetables.
  4. Pour liquids into cooker.
  5. Cook on high for 4 hours or on low for 8 hours.
  6. Stir in the remaining ingredients about 15 minutes before you are ready to serve.
