Baked veggie "fries"

Serve these healthy baked veggie "fries" and your kids will clean their plates.

Ingredients

  • Mixed vegetables cut into evenly sized sticks
  • Olive oil
  • Parmesan cheese
  • Italian seasoning
  • Salt and pepper to taste
  • Options include: carrots, parsnips, sweet potatoes, butternut squash, sweet peppers, and so on

Directions

  1. Preheat oven to 350 degrees F. Spray a cookie sheet with cooking oil.
  2. Toss the veggies with a little bit of olive oil, cheese, seasoning, salt, and pepper.
  3. Place on a baking sheet and bake for 20 minutes, turning the fries over halfway through baking. Fries should be brown on the edges and become crispy.
