Baked cod with parmesan cracker topping

  • 1 1/2 lbs boneless cod filet
  • 1 packaged sleeve or round buttered crackers, such as Ritz
  • 2 Tbsp salted butter
  • 1 Tbsp parmesan cheese


  1. Pre-heat oven to 350
  2. Cut filet into 4 pieces
  3. Add crackers and parmesan cheese to large ziplock bag, then seal bag. Crush crackers with hand or rolling pin.
  4. Line baking sheet with aluminum foil and coat with non-stick cooking spray.
  5. Put filets on foil, then sprinkle cracker/cheese mixture on top of each filet.
  6. Dot each filet with small amounts of the butter.
  7. Bake until fish is white, flaky and cooked through, approximately 25 minutes.
