Omit frying from the classic chicken parmesan recipe for a lighter version.

Ingredients

  • 4 boneless chicken breasts, pounded to 1/2-inch thick
  • 1 egg
  • 1/2 cup 2 percent milk
  • 1 1/2 cup bread crumbs
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 16-ounce jar marinara sauce
  • Parmesan cheese for topping

Directions

  1. Whisk egg and milk in a medium bowl.
  2. Dredge chicken in mixtured, then dip in bowl of breadcrumbs.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Brown the chicken on each side until it is golden brown, about 4 minutes on each side.
  5. Transfer chicken to baking dish, and top with mozzarella.
  6. Pour marinara sauce over the chicken, and sprinkle with parmesan and a little more mozzarella.
  7. Bake at 350 degrees for about 25 minutes or until bubbly.
