Recipe: Chile Rellenos

This recipe is so easy and very delicious! It's always the first dish to disappear at partys and pot lucks. It's great for dinner and even better for brunch!

Ingredients:
2 1/4 cups Jack cheese, grated
2 1/4 cups Longhorn cheese, grated
2 4oz. cans whole peeled green Ortega chiles
2 eggs
4 Tbsp. milk
1 Tbsp. flour

How to make this recipe:
Cut green chiles in lengthwise strips. Butter the bottom of an 8x8 baking dish and line with strips of chile. Sprinkle with grated cheese, add another layer of chiles and cheese, repeating until all is used.

Beat egg, milk and flour. Pour over the top and bake for 50 minutes at 350 or until top is dark golden brown. Let cool 10 minutes before cutting. Cut and serve. Prep time: Approx. 20 minutes

Serves 6-8
