How to make this recipe:
Peel yams and cut into 4-6 pieces.
Place in baking dish, and sprinkle sugar on top. Sprinkle Nutmeg, and add pats of butter on top.
cover tightly with alum foil.
After baking, there should be quite a bit of juice in dish. Pour
juices into small pan and bring to a boil.
In large spoon or in bowl, add the cornstarch and a little of the hot potato/yam juice until starch is completely desolved and very thick. Combine the cornstarch mixture to juices in skillet. Stir until thick and carmely. Simmer. Add 2-3 drops of vanilla flavor. Remove from heat and let stand for about 5 minutes. Pour over yams.
If you desire, a sprinkle of cinnamon may add to the richness of this recipe. Either way, enjoy!! Notes: After you have successfully prepared and eaten these yams, you will never go back to your old yam or sweet potato recipes. That's the truth!
Prep time: 45 minutes or until fork easily penetrates yams
Makes approx 12-15 generous servings
