2 pounds perch or cod fillets - pat dry
2 beaten eggs
1 cup fine, dry bread crumbs
1/2 cup butter, melted
2 tablespoons lemon juice
Fresh Lemons
Salt and pepper
How to make this recipe:
Place bread crumbs into a shallow pan or dish, season with salt and pepper. Place eggs into a shallow dish or pie pan. Dip fish into beaten egg, then into bread crumbs.
Place coated fish in a shallow baking pan. Blend melted butter and lemon. Drizzle over fish.
Bake at 475 degrees until golden brown and fish flakes easily when tested with a fork. Serve with baked or fried French Fries and the fresh lemon wedges.
