12 corn tortillas
Jack cheese, shredded
favorite salsa
canola oil
How to make this recipe:
Put shredded cheese on half of tortillas, slowly lay one side down in hot oil, gently folding over other half. Brown lightly about 20 seconds or so. Use tongs to flip over and brown other side the same. (If it splatters, turn the heat down a little.)
When done browning on both sides, remove and place on paper towels to absorb oil. Do the same for the entire dozen or however many you choose to cook. Serve with spanish rice and a green salad.
