3/4 cup shortening
1 1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas
2 cups flour
4 tablespoons buttermilk
1 teaspoon baking soda
1/2 cup chopped pecans (optional)
How to make this recipe:
Cream shortening; add sugar gradually and mix again. Add unbeaten eggs one at a time, beating after each addition. Then add mashed bananas with buttermilk, mix well. Fold in sifted dry ingredients and nuts. Pour into a greased and floured 13x19 pan.
Bake at 350 degrees about 30 minutes until toothpick comes out clean. If using as a snack cake, dust with confectioners' sugar. For a dessert, frost with a white or cream cheese frosting and sprinkle with crushed pecans.
