Recipe: Citrus Yams




Served beautifully and individually: A new twist to an old favorite.


Ingredients:
6 large navel oranges
Fresh or canned yams: enough to fill 3-4 oranges
Brown sugar: to taste
Butter: to taste
Salt: to taste

How to make this recipe:
On each end of orange, cut off small area so orange will "sit" level: Cut oranges in half and scoop out fruit and pulp. Reserve fruit in mixing bowl.

Mix yams, brown sugar, butter and salt. Fold in reserved fruit and mix together.

Spoon mixture into orange halves and top with mini-marshmellows.
Bake in medium oven to heat thoroughly and brown marshmellows.

Note: If canned yams are used, cut time in oven by heating yams with butter, sugar, and salt before mashing and stuffing oranges. Serve individually or on a platter.
