2 tbsp red wine vinegar (or cider)
1 tsp sugar
1 tsp salt
1 tbsp prepared mustard
1/2 tsp pepper
6 tbsp salad oil
1/2 garlic clove
8 cups crisp spinach, hard stems removed
3 hard-cooked eggs, sliced
8 slices bacon, fried and crumbled
2-3 green onions, finely chopped
6-7 fresh mushrooms sliced
1/2 cup fresh cauliflower sliced (optional)
How to make this recipe:
Mix first 7 ingredients and refrigerate. Tear spinach into bite-sized pieces and prepare remaining ingredients. Add dressing just before serving, having removed the garlic clove. Prep time: 10-15 minutes
