1/2 cup low fat cottage cheese
3 T buttermilk
1 T white wine vinegar
4 T crumbled bleu or Roquefort cheese
black pepper to taste
How to make this recipe:
In a blender or food processor, process all ingredients except bleu cheese until smooth. Transfer to a small bowl and stir in crumbled bleu cheese.
Transfer the mixture to a small bowl. Stir in the Roquefort or bleu cheese. Season to taste with the pepper.
Dressing will keep for a week or more in the refrigerator. Makes about 1 cup
