1 pound ground beef
1/2 cup chopped celery
1 cup water
2 cubes beef bouillon (or 2 tsp. granules)
1 tsp. chili powder
1/2 cup uncooked barley (medium)
1/2 cup chopped onion
36 oz. can V-8 juice
1 lg can crushed or stewed tomatoes
1 tsp. salt
1/4 tsp. pepper
1 can corn or green beans, drained )optional)
How to make this recipe:
In large heavy saucepan brown beef and onion. Drain. Stir in remaining ingredients and heat to a boil. Reduce heat and cover.
Simmer until barley is tender, about 1 hour. Notes: You may need to add a bit more water if it gets too thick. This meal is good served with garlic bread.
Prep time: 10 minutes prep, 1 hour cooking time.
