2 lbs. beef stew meat (I use eye of round cut up into chunks)
3-4 carrots, peeled and cut into small slices
3-4 potatoes, peeled and cut into chunks
2 celery stalks, diced
1 onion, chopped
2 teaspoons salt
2 garlic cloves, minced
1 teaspoon sugar
1 Bay Leaf
2 tablespoons fresh parsley, chopped
1/2 teaspoon black pepper
3 tablespoons Minute Tapioca
2 cups V-8 juice or tomato juice
How to make this recipe:
Put meat in a large Dutch oven which has a tight fitting lid. Put vegetables on top of meat. Combine the juice with the seasonings and pour over the meat and vegetables - DO NOT STIR!
Cover tightly and bake at 275 degrees for 4 hours. Prep time: 30 minutes
