1/2 cup cocoa powder
2 cups sugar
1/4 cup butter
1/2 cup milk
1/2 cup peanut butter
3 cups quick oats
1 tsp vanilla extract
How to make this recipe:
Sir first four ingredients together in a medium saucepan and bring to a boil. Allow to boil for one full minute after it reaches a rolling boil. Add the peanut butter and vanilla. Stir in oatmeal.
Drop by teaspoonfull onto a wax-paper-covered cookie sheet. Place in refrigerator to cool. These are hard to eat only one at a time, so be warned!
Notes: After becoming firm in the refrigerator, I remove and place in a sealed container. There is no need to keep them refrigerated.
It's got nutritious oatmeal and peanut butter to offset the calories of the cocoa -- haha!
Prep time: approximately 20-30 minutes
Yield: 3 dozen
