2 cups flour
3 tsp baking powder
1/2 cup raw sugar
1 Tbsp lemon rind
1 cup lite sour cream
1/2 low fat milk
1/3 cup lemon juice
2 eggs
3 - 4 tablespoons of butter or low fat/cholesterol substitute (melted)
How to make this recipe:
Sift flour and baking powder. Add sugar and rind.
In another bowl, mix egg, sour cream, melted butter,milk, lemon juice, until smooth. Combine the wet and dry ingredients.
Bake in preheated 400 F oven in either greased cups or muffin tins, until golden and firm to touch. Serve warm with a light cream cheese and a lemon marmade for breakfast
