1 package corn tortillas
1 pound ground beef
1 can chili without beans (we use Hormel)
1 large onion, chopped
4-8 ounces cheddar cheese, shredded
How to make this recipe:
1. Brown ground beef in skillet with half of chopped onion. Drain.
2. In medium saucepan, warm chili until soupy.
3. Dampen tortillas under warm water. Heat tortillas two at a time in microwave for 20 seconds.
4. Place a large spoonful of burger and onion mixture in center of tortilla with cheese. Roll up enchilada and place seam side down in a lightly oiled baking pan.
5. Repeat steps 3-4 until for all tortillas.
6. Cover enchiladas with chili. Sprinkle cheese and onion on top. Bake at 350-375F for 10 minutes or until cheese is melted.
