Recipe: Garlic Mashed Potatos




Bake, don't boil, these mashed potatos. These are especially easy because there is no need to peel the potatos.


Ingredients:
1 pound redskin potatos
3 tablespoons butter
1/4 cup milk
4 cloves roasted garlic

How to make this recipe:
Grease potatoes with shortening and place on baking sheet. Place a bulb of garlic on a square of foil and coat the bulb with olive oil. Seal foil around the garlic and place the packet on the baking sheet with the potatos. Bake at 350F for 30-50 minutes, until potatos are tender. Remove garlic packet from oven after about 20 minutes. Allow roasted garlic to cool.

Once potatos are cooked, remove from oven and allow to cool slightly. Chop potatos, add butter and milk and mix with an electric mixer. Add garlic cloves and salt and pepper to taste. Heat potatos in saucepan to warm them up again, if necessary. 50-60 minutes
