3 tablespoons butter
1/4 cup finely chopped green onion
1/2 cup celery, chopped
2 cups broccoli, finely chopped
1 teaspoon fresh thyme
3 tablespoons all-purpose flour
3 cups homemade chicken stock (or chicken broth)
1/2 cup half-and-half
salt and pepper to taste
How to make this recipe:
Melt butter in a heavy sauce pan. Stir in green onion, celery and broccoli and saute about 7 minutes.
Then add thyme and flour. Pour in chicken stock and boil for 1 minute.
Reduce heat to simmer until veggies are soft.
Stir in half-and-half and heat thoroughly.
Add salt and pepper to taste. Serves 4-6
